A Night at the Chef’s Table: Featuring Dave Cruz and Kim Beto Saturday, January 25 | 6:30-8:30 pm
Join us as we celebrate the art of living well at Seventy-Seven! Dave Cruz, former executive chef at Thomas Keller’s Ad Hoc and creator of the menu at Seventy-Seven, will be in the kitchen for this delightful five-course dining experience. And Master Sommelier Kim Beto will pair each of Dave’s creations with one of his favorite wines.

CanapĂ© Reception – Alfred Gratien Brut Classique Tartlet with gorgonzola dolce, melted onions Crisp polenta with smoked almond pesto and manchego Citrus marinated prawns with cilantro
Crudo – Jordan Chardonnay (Platter of 1 each per person) Yellowtail jack with preserved lemon, coriander, black pepper California fluke with scallions, Fresno chili relish Charred tuna with citrus soy Beef tenderloin carpaccio with horseradish cream, radish shoots
Salad – Freestone Pinot Noir Salad of baby mixed greens with persimmons, pomegranate seeds, candied walnuts, red radishes, shaved cippolinis, and champagne vinaigrette
Main Course – Marinus Bordeaux Blend Grilled beef skirt steak with caramelized shallots, Brussels sprouts, French round carrots, Tokyo turnips, shiitake mushrooms, baby leeks, marble potatoes, and charred onion puree
Dessert – Noble One Late Harvest Semillon Chocolate walnut tart with white chocolate mousse Pavlova with hazelnut cream and winter citrus segments Lemon posset with graham crumbles
